Cherries
According to my grandmother’s recipe
Ingredients (for about 28 cherries):
80 g butter
½ cup icing sugar
1 egg white*
Red food coloring
½ cup of ground walnuts
20-25 butter biscuits
1 tablespoon of rum
Vanilla
Double pine needles
Sugar to coat
* Since I have kids, I avoid raw eggs and replace with another humid and sticky ingredient such as jam, more butter or a little honey.
Preparation:
In a deep bowl, cream the butter and icing sugar. Stir in the egg white and beat again until the mixture is absorbed.
Put 7 to 8 drops of red food coloring and the finely crushed walnuts. Mix well. Finally, pop in the ground biscuits and rum. Work the mixture until it is even and thick, remaining as a compact mass when squeezed between the fingers. However, if the batter feels soft, add more cookies or walnuts. And if it remains crumbly, add a little honey, jam, glucose or more butter.
Shape balls with the size of a cherry, roll them in sugar and then make pairs with a double pine needle. Refrigerate until serving time.
