Duck wings with pears and baby carrots
Or a quick lunch for two
Ingredients:
4 duck wings
2 tablespoons soy sauce
1-2 tablespoons of honey
2 pears
5-6 young carrots
3 potatoes
1 teaspoon dry shallots (or onions)
Salt and pepper
Ghee or butter
Preparation:
Marinate the duck wings for 20 minutes in soy sauce and honey, diluted with a little water. Transfer to a baking dish, pouring also the marinade.
Rinse the pears and without peeling them, place them next to the duck meat. Peel the carrots and potatoes. Leave the carrots whole (and why not leave part of the stem), cut the potatoes into pieces. Place the two vegetables in a covered glass dish and cook in the microwave, at maximum power for 6-7 minutes. Then place next to the other ingredients in the pan.
Season the dish with salt, pepper and dried shallots. Spread dices of ghee or butter over the vegetables, pear and duck. Roast for 30 minutes in an oven preheated to 210°C. Drizzle the duck wings with the cooking juice halfway through cooking.
Serve the duck wings immediately with a nice green salad.
