Chicken fillet with melted cheese
On my mom’s recipe
500 to 600 g of chicken fillet (or pork)
200 g of melted cheese, such as Laughing Cow original
200 g of sour cream
250 g white mushrooms
Salt and black pepper
Line the bottom of an ovenproof glass baking dish (with its own lid) with half of the sliced meat. Salt and sprinkle with black pepper. Cover with half the melted cheese, cut in half crosswise, then with half the sliced mushrooms. Repeat the layers again – meat, spices, melted cheese, mushrooms.
Pour in enough cold water to cover the ingredients halfway up, cover the dish and cook at 200°C for about 1 hour. Then remove the lid and cook for another 20 minutes until the sauce thickens.
Then, spread the sour cream over the chicken. Return the dish to the oven and roast until nicely golden, which takes a further fifteen minutes or so.
