Cheese balls with jam and crackers
Ingredients:
Homemade chickpea crackers (their recipe)
Crispbread, wholegrain
1 sweet pear
40 g blue cheese
40 g soft cheese (Camembert type)
40 g grated cheese
1 cup roasted walnuts (or almonds, hazelnuts)
Preparation:
Chop the pear and put it in a colander. Press down gently to drain the excess juice. Crumb 1 or 2 crispbreads. Mash the cheeses together until you make a puree.
Then, mix all the ingredients in a bowl, proportioning the dry crumbs so as to obtain a thick paste (between 2 to 4 tablespoons). Add 2-3 tablespoons of crushed walnuts.
Wet your hands and make small balls out of this batter. Coat each with coarsely ground toasted walnuts.
Serve on chickpea flour crackers (or others), topped with your favorite jam.
