Mish Mash with sunny side up eggs

Ingredients for 2 servings:

6 red bell peppers
Butter (I had ghee)
80 g feta cheese
2 or 4 eggs
Black pepper and salt
Dried savory
Fresh parsley

Preparation:

Grill the peppers on the barbecue or in the oven (grill function). Then remove the stalks, seeds and skin. Cut the pulp into chunks and stew in 1 tablespoon of butter for 2-3 minutes (in a lidded saucepan). Season with salt, pepper, dry savory and chopped parsley.

Butter a round ovenproof pan of suitable size. Transfer the peppers into it and spread over in an even layer. Cover with grated or crumbled feta cheese. Make two (or 4) small nests in the pepper base by pressing with the back of a spoon. Dip an egg in each hollow. Season again with salt, pepper and savory. Garnish with a few flakes of butter.

Bake the mish-mash at 200°C until the eggs are cooked to your liking. Serve immediately with a fresh salad.
