Bulgarian Tarator soup
Or cold cucumber soup


500 g yogurt, 3.6% fat
Cold water
1 cucumber (thin and fresh)
2 tablespoons chopped dill
2 tablespoons of oil
1 garlic clove
Salt to taste

Pour the yogurt in a bowl and whisk until creamy. Dilute with cold water while stirring. Normally, you need about 280 ml of water for 500 g of yogurt. However, the thickness of the soup is to taste. The tarator can be more liquid than this or thicker. Then add salt and oil and whisk again to blend well.

Wash, peel and cut the cucumber into small cubes, crush and mince the garlic clove. Dip both into the stirred yogurt. Then flavor the cold tarator soup with the dill and stir well.

Refrigerate until ready to serve. Garnish with chopped walnuts.
