Bulgarian style lentil soup
1 cup (mug size) of lentils (blond or green)
3-4 cloves of garlic
1 grated tomato (optional)
3-4 tablespoons of oil
1 teaspoon dried savory
1 teaspoon paprika
Salt and pepper to taste
Put the lentils in a colander and rinse them under running water. Transfer to a deep saucepan. Add the finely chopped onion, carrot (grated or diced) and tomato. Remove the skin from the garlic cloves and dip them in. Then sprinkle with oil and all the spices.
Cover everything with 3 cups of boiling water. Stir and bring to a boil. Then reduce the heat, lid and simmer for about 30 minutes. At the end of cooking, the lentils are softened and the sauce thick.
It’s possible to enrich the taste of the dish with a few smoked sausages. They need 5 minutes of cooking once added to the dish.
Serve the lentil soup hot, even if lukewarm is perfect for me as well.
