Tuna and rice salad
Ingredients:
5-6 salad leaves
1 can of tuna in oil
½ cup rice
½ fresh cucumber (as thin as possible)
1 juicy apple
2 tablespoons fresh dill
Walnut or other oil
Salt and pepper to taste
Preparation:
Put the rice in a colander and rinse it several times under tap water. Boil in a large volume of salted water for 20 minutes. Then drain the water and rinse the rice under cold water. Season with walnut oil and let cool completely.
Peel the cucumber and the apple and cut into small cubes. Chop the green salad into thin strips. Partially drain the oil from the canned tuna. Add all the ingredients to the rice and stir well. Salt to taste. Add more oil and pepper.
Transfer the salad to a salad bowl, garnish with a few twigs of dill or parsley and enjoy.
