The ultimate Bulgarian salad

Ingredients for 2 servings:

2 tasty tomatoes
1 fresh cucumber (as thin and fresh as possible)
1 red or green bell pepper
½ red onion or 1 stalk of spring onion
4-5 sprigs of parsley
80 g feta cheese
Colorful salt*
Olive oil and vinegar to taste

* It is the emblematic spice of Bulgaria, composed of dried fenugreek, savory, sweet paprika, cornstarch, salt, sometimes black pepper and garlic powder

Preparation:

Rinse all the vegetables. Grill the peppers on the barbecue or in the oven (grill function), then remove the skin, the core and the seeds. Cut in pieces. Peppers are often left raw in the salad. Do as you prefer.

Peel the cucumber and cut into slices of a preferred thickness. Slice the tomatoes into large pieces or half-moons. Mince the onion.

In a bowl, combine the tomatoes and cucumber. Arrange the chopped peppers and onion crumbs on top. Cover the salad with grated feta and chopped parsley.

Finish by drizzling with olive oil, vinegar and a few pinches of colorful salt.
