Quatre-quarts cake
A Brittany butter cake
Ingredients:
200 g flour
200 g sugar
200 g eggs (about 4 eggs)
200 g butter
1 baking powder
Preparation:
Cream the eggs and sugar for 3 minutes with an electric mixer. When they double in volume, gradually pour in the melted butter. Finally, thicken the mixture with the sifted flour and baking powder.
Pour the dough into a non-stick rectangular cake pan, greased or lined with parchment paper. Bake at 175°C for about 40 minutes or until a wooden stick pricked in the middle of the cake comes out dry. If necessary, cover the Quatre-quarts with aluminum foil, if it turns golden too soon.
Let the cake cool completely before cutting it.
* The Quatre-quarts (or Four-quarters) cake is very popular in Brittany (France). As its name suggests, it is made up of 4 ingredients (always butter, eggs, sugar and flour), which are in the same quantity speaking of weight and represent respectively ¼ of its composition.
