Cheesecake cookies with green figs
Inspired by Yoli
Ingredients:
1 ½ mug of flour (about 180 g)
½ teaspoon baking powder
1 pinch of salt
250 g plain cheese spread
180 g sugar
90 g soft butter
1 egg
1 teaspoon natural vanilla extract
1 tablespoon grated lemon zest
10 plain butter biscuits (e.g. petit-beurre)
Green fig jam (or other candied or dried fruit)
Preparation:
In a bowl, cream the butter and sugar. Add the cheese spread and stir well again. Then add the flavorings and the egg. Finally, spoon in the flour sifted with the baking powder and a pinch of salt.
Crumble the cookies and transfer them into a bowl. Then, using 2 teaspoons, dig into the dough, shape a ball and dip it into the crumbs. Wrap it well and, without pressing too much, reshape a ball. Place the cookie on a large baking sheet, lined with parchment paper. Repeat until the dough is finished. If necessary, crumble some more biscuits.
Decorate each cookie with a fruit coming from a jam, or a candied fruit, even dry. I had green fig jam and soft dried apricots.
Bake the cookies for about 20 minutes at 180°C. Let them cool down a bit before moving them. Immediately, they are very soft.
