Cold party bites with omelette and cherry tomatoes
Ideal for a party or picnic
Ingredients for 4 people:
4 eggs
100 g of soy yogurt (or cow)
Salt and pepper
12-16 cherry tomatoes
1 sprig of fresh basil
For the sauce:
3-4 fresh basil sprigs
3-4 fresh dill sprigs
Salt and pepper
1 garlic clove
Olive oil
Juice of ½ lemon
For the presentation:
Feta cheese or mozzarella
Black olives
Fresh dill
Toothpicks
Preparation:
Arrange the cherry tomatoes, washed, dried and cut into halves, in a rectangular ceramic dish (mine was 18 by 26 cm). Sprinkle with pepper, chopped basil and salt.
Whisk the eggs and yogurt. Season with salt and pepper and pour the mixture over cherry tomatoes. Place the latter symmetrically with a fork.
Bake the omelette for 20-25 minutes at 180°C. Cool completely before cutting into squares.
For the sauce, place all ingredients in a blender. Pour as much olive oil as necessary to obtain a thin sauce. Possible to add more lemon juice. The proportions are to taste, including the quantity of salt.
Before the presentation, garnish each omelet square with an olive or a cheese cube and top with green sauce. A pinch of chopped dill can complete the appetizing outlook.
