Walnut Tiramisu
For the first birthday of my little Ioana
Ingredients:
2 eggs
60 g sugar
220-240 g mascarpone or cream cheese
1 pinch of salt
40 g shelled walnuts
3 tablespoons sugar
100 ml strong coffee
8 walnut macaroons (with the diameter of the glass)
1 tablespoon natural cocoa coffee

Preparation:
Separate the eggs whites and yolks. Then beat the egg whites until stiff peeks with a pinch of salt and whisk the yolks with the sugar until creamy. Use an electric mixer in both cases.
Then, stir in the mascarpone into the egg yolk cream. When creamy, add the whites (with gentle movements). Refrigerate for a moment.
Brown the walnuts in a non-stick pan and pour the sugar over. Caramelize without stirring. When sugar is amber, mix well to coat the walnuts with the caramel. Then spread the walnuts on parchment paper and let cool completely.
To make the glasses with tiramisu, put a large walnut macaroon in the bottom, dipping it first in coffee. Cover with cream. Place a second macaroon and finish with a few tablespoons of cream. If you want a thicker crunchy layer, it is possible to crush the macaroons into chunks (but you’ll need more of them in this case) and pour over some coffee. Place the tiramisu glasses in the refrigerator until serving time.
Before serving, finish each glass of tiramisu with small walnut macaroons, caramelized walnuts and a shake of natural cocoa (use a strainer).
