Еgg and prune stuffed rutabaga
Ingredients for 2 servings:
2 medium rutabagas
100 g fresh goat cheese
Salt and pepper
6 pitted prunes (dried)
Butter and oil
Brush the rutabagas under running water and, without peeling them, cut in half, widthwise. Trim a bit the bottom of the halves to obtain stable “cups”. Place them in a container suitable for microwave oven, cover and microwave for 10 minutes at maximum power. Then prick a rutabaga with the blade of a knife. If it comes out easily, they are ready. Otherwise, continue cooking for 3-5 minutes.
Dig the rutabagas shaping cups, then brush with oil on all sides, salt and dip a knob of butter inside.
Whisk the goat cheese and egg in a bowl. Salt and pepper. Then add 2 finely chopped prunes.
Stuff the rutabagas with this mixture and dip a whole prune on top of each. Roast in the oven for about 30 to 40 minutes. Serve warm, although lukewarm, they are no less excellent.
