Green cheese pie
Called Mlyn in Bulgarian
1 bunch spinach (approx. 300 g)
1 bunch dock
2 stalks spring onion
½ bunch fresh dill
Salt and pepper
2 cups flour
300 g of yoghurt
1 teaspoon baking soda
½ teaspoon salt
½ pack of butter (of 125 g)
150 g feta cheese, a bit desalted in cold water
First prepare the stuffing by chopping the greens and cooking them in a sip of olive oil (covered). Season with salt and pepper. Once the vegetables loose their volume, remove from heat and let cool.
In a bowl, whisk the eggs, yogurt (stirred with the baking soda), salt and melted butter. Spoon by spoon, stir in the flour, mixing well after each spoonful.
You should get a thick, sticky dough. Pour half of it into a greased round cake pan (28 cm in diameter). Spread over the greens (drained) and crumbled feta. Cover with the remaining dough and smooth.
Bake the pie in the oven at 180°C until a knife comes out clean. Let stand 10-15 minutes and enjoy as a light dinner, accompanied with a cup of plain yogurt.
