Oven baked stuffed pattypans
Ingredients:
2 large pattypans (approx. 900 g each)
Oil
Salt and pepper
2 eggs
3-4 tablespoons of fromage blanc or yogurt
2 tablespoons smoked bacon sticks
2 tablespoons grated cheese
1 potato, boiled or baked
1 teaspoon of dried savory
Preparation:
Carefully dig the pattypans making large gourds. Salt and brush with oil on all sides. Then wrap them individually in aluminum foil and bake 200-210°C. From time to time, press the packages to check the stage of cooking. When softened, remove the pattypans from the oven. Baking can take up to 80-90 minutes.
Remove the aluminum foil and place the pattypans upside down on a grid to evacuate the water, released during cooking. Meanwhile, wisk all ingredients for the stuffing in a deep bowl, crushing the potato with a fork. Salt and pepper.
Slide a knob of butter on all sides of the pattypans and put a small chunk of it at the bottom of the gourds. Salt again, if necessary, and fill with stuffing. If you have some of it left, pour it into a small silicone cake mold and out it in the oven along with the pattypans. Put a slice of butter on each pattypan, give a good grate of black pepper and bake for another 40-50 minutes or until the stuffing is well cooked through and the pattypans golden.
