Green mayonnaise
Ingredients:
3o g cashews
20 g pistachios
15 g fresh dill
10 g wild garlic
2 egg yolks
Juice of ½ lemon
150 to 200 ml of oil
Salt and pepper
Preparation:
Crush the nuts and fresh greens in a mortar until a smooth paste. Transfer to a bowl, add the egg yolks and 1 teaspoon of lemon juice.
Whisk this green paste with a hand mixer on high speed and pour in the oil in small sips. Alternate occasionally with lemon juice. When the mayonnaise is done, pour the remaining oil in a thin stream. You can add up to 250 ml of oil. I used about 150 ml of oil and made one 250 ml cup of mayonnaise.
In the end, season with salt and pepper and transfer into a sealed container. Refrigerate. This aromatic mayonnaise is a perfect accompaniment for a salad, a slice of bread, steamed vegetables or chicken breast.
