Vanilla fantasy with chocolate wafers
500 g vanilla ice-cream
400 g fromage blanc, cream cheese or one more box of vanilla ice-cream
4-6 tablespoons of sugar
1 dose vanilla
18 g gelatin
3-4 chocolate wafers (40 g each)
80 g of dark chocolate
40 g butter
Edible dried flowers, berries or dark chocolate for decoration
About 1 hour before starting the fantasy cake, take the ice-cream out of the freezer and leave at room temperature to slacken and almost melt.
Then, mix the ice-cream, fromage blanc (or cream cheese) and sugar in a deep bowl. Sweeten to taste, in fact. Stir until smooth with a hand whisk. Add an extra touch of vanilla.
Soak the gelatine in 3-4 tablespoons of water, then dissolve in a water bath. Finally, whisk it vigorously into the icecream mixture.
Grind the chocolate wafers into uniform crumbs in a blender. Then line the bottom and sides of a rectangular cake pan with parchment paper. Pour in 1/3 of the cream mixture. Cover with an even layer of chopped wafers. Repeat the layers again. Finally, pour over the last third of the vanilla mixture. Cover and refrigerate the fantasy cake overnight.
The next day, return the vanilla fantasy on a long plate. Unmold. Then make the chocolate icing by melting the chocolate and butter in a bain-marie. Spread over the dessert and let it flow freely. Decorate to taste and serve chilled.
