Mango and white chocolate muffins
Ingredients for 12 muffins:
200 g sugar
½ cup milk
1/3 cup melted butter
4-5 drops of mango flavoring
1 tablespoon rum (or 2 drops rum flavoring)
10 tablespoons flour
½ teaspoon baking powder
1 ripe mango
In a bowl, whisk the egg and sugar. Dilute with the milk and butter while stirring. Flavor with rum and mango. Mix until smooth.
Bind it all with the sifted flour and baking powder. Peel the mango and cut it into medium sized cubes. Stir in two-thirds of it into the dough.
Butter a 12-muffin baking tin and fill each mold up to 1/3 of it height with dough. Dip a piece of white chocolate in the middle and cover up to 2/3 of its height with dough. Decorate the top with 2-3 cubes of mango.
Bake at 180°C for about 30 minutes.
