Four cheese and baked cherry salad
Ingredients for 2 people:
Favorite green salad
20 g blue cheese
20 g hard goat cheese
20 g hard cow cheese
¼ ripe avocado
½ ball mozzarella
10-15 big cherries
Soy sauce and olive oil to season
First prepare the cherries so that they have time to cool. Wash them, remove the stems and place in a baking tin, lined with baking paper. No need to pit them as the stones will make the cherries even more fragrant during baking (but don’t forget to warn your table-companions the they are not pitted). Bake for 15-20 minutes at 180°C or until slightly tender (but not falling apart). Cool.
Rinse the salad and carefully transfer it into a bowl.
Cut the cheeses (cheeses of your choice, not necessarily those mentioned above) and the avocado into cubes. Scatter them on the salad. Finally place over the cooked cherries.
Serve the salad immediately seasoned with olive oil. A drizzle of soy sauce or favorite dressing can round off this bouquet of fragrances.
