Exotic salad with quinoa
Ingredients:
½ tea mug of quinoa
1 blood orange
½ ripe mango
½ fresh zucchini
½ ripe avocado
50 g smoked salmon
2-3 tablespoons of walnut oil
½ orange juice (blood or normal)
1 tablespoon fresh dill
Preparation:
Boil the quinoa in 3 times its volume of salted water, then strain (if there is still boiling water left) and stir with a little walnut oil. Cut the zucchini into cubes, without peeling it. Leave raw or grill on the barbecue or on a grill pan before starting the salad (cut into rings).
Peel the orange, discard the inner skin and cut it into pieces. Dice the mango and avocado, chop the salmon into square chunks.
In a bowl, combine the quinoa, salmon and all the prepared fruits and vegetables. Season with salt, orange juice and walnut oil, stirring gently. Serve immediately.
