Mini walnut tarts
Based on the recipe of a friend of my grandmother
Ingredients for 40 mini tarts:
125 g butter
50 g icing sugar
2 egg yolks, hard boiled
150-180 g flour
1 ½ cup ground walnuts
3-4 tablespoons sugar
While they are still hot, mash the egg yolks in a bowl. Add the softened butter and whisk until creamy. Then add the sugar and flour. Make a soft and smooth dough. Take a piece with the size of a cherry, place it in a small fluted tart pan and line it evenly with the dough by pressing with the index finger. Do the same with the rest of the dough.
For the stuffing, stir togrther the ground walnuts, sugar, vanilla and eggs. Fill each mold to the brim with the walnut mixture.
Bake the mini tarts at 180°C for about 20-30 minutes. Cool completely before unmolding. Serve lightly dusted with icing sugar.
