Tangerine cookies
Based on the recipe of a mysterious old bit of paper
Ingredients:
Zest of 2 tangerines
175 g raw almonds
100 g sugar
2 tablespoons flour
2 eggs
Preparation:
Scald the almonds, then remove the skin, let dry and finely grind. Place in a bowl and mix in the sugar and flour. Then add 1 egg yolk and 1 whole egg. Mix until you get a smooth, sticky dough.
Whisk the remaining egg white until stiff peaks with a pinch of salt. Then gently incorporate it into the mixture. Finally, put the zest of the 2 tangerines.
Using two spoons, make small and well spaced piles on a parchment paper. Bake the cookies at 175°C until golden brown or about 15-20 minutes. Carefully remove the paper and let cool on a wire rack before serving.
