Bulgarian mlyn
Based on my grandmother’s recipe
Ingredients:
2 cups flour
1 cup yogurt
1 teaspoon baking soda
2-3 eggs
150 g feta cheese
½ teaspoon salt
60 ml sunflower oil
8 cubes of butter
Preparation:
Mix the yogurt and soda. Wait until it rises and pour into a bowl. Whisk in the eggs and oil until smooth consistence. Add the cheese, about 150-200 ml of warm water and salt. Then thicken the dough with the flour, stirring it in spoon by spoon.
Normally, you should get a thick and sticky paste. Pour it into a deep baking dish, well buttered. Smooth the surface with a spoon and scatter the butter cubes on it.
Bake the mlyn in the oven at 200°C until a knife comes out clean. It takes approximately 25-30 minutes. Serve warm (or reheated in the oven) accompanied by a bowl of cold plain yogurt.
