Tahini cookies
Ingredients:
2-3 tablespoons honey
2 tablespoons brown sugar
4-5 tablespoons tahini (sesame paste)
45 g of grated coconut
1 egg
2 tablespoons milk
2 pinches of baking powder
5-6 tablespoons cornflour
Preparation:
In a deep bowl, whisk together the honey, sugar, egg and tahini. Then stir in the milk.
Grind the coconut in a coffee grinder until you get a fine powder. Stir into the mixture. Finally, put the baking powder and corn flour. Add the latter gradually to determine the right amount by yourself. You must obtain a mixture with the consistence of a cake batter.
Preheat the oven to 180°C. Shape small mounds of dough on a baking paper using two spoons. You can leave the mounds fluffy or give them a round biscuit shape.
Bake until golden brown or about 10-15 minutes.
