Potato waffles with smoked salmon
Ingredients for 8 pieces:
500 g peeled potatoes
100 g sour cream
3 eggs
Salt and pepper
2 tablespoons milk
10 g of butter
1 tablespoon rice flour (or other)
2 tablespoons oil
160-200 g smoked salmon
200 g sour cream
Salt and pepper
1 clove garlic
1 tablespoon fresh dill (chopped)
Preparation:
Boil the potatoes in salted water and mash with the milk, butter, oil and sour cream. Season the mixture with salt and pepper. Then add, one by one, the eggs and rice flour. Prepare a batter that is relatively more liquid than normal potato mash.
Heat a waffle maker to the right temperature. Brush the waffle irons with oil and fill each with potato mixture. Cook until waffles are golden. Normally, the machine indicates the end of cooking with a light. Should you not have a waffle maker, cook the mixture in a non-stick pan and make a kind of American pancakes.
Separately make the sauce, whipping the cream, crushed garlic and all the spices.
Serve the potato waffles immediately, leaving each guest garnish himself his waffle with cream sauce and smoked salmon. If there are waffles left for next day, reheat them in the oven so that they regain their freshness and crunch.
