Honey, walnut and thyme carp
1 carp (mine was 500 g, but it is better to have it at 1 kg)
1 handful of walnuts
3 teaspoons of honey
2 teaspoons of ghee or butter
3-4 sprigs of thyme
Salt and pepper
Peel the potatoes and cut into thick slices. Blanch for 10 minutes in salted water. Then drain the water and place the slices in the bottom of a flat oval or rectangular baking dish. Sprinkle with pepper and drizzle with olive oil.
Carefully gut and rince the carp (if you bought it whole). Put it on the potatoes. Salt and pepper.
Peel and finely grate the carrots. Mix in a bowl with the chopped walnuts, thyme leaves, honey and soft butter. Fill the fish with this stuffing. Then, brush the outside with honey and cover with crumbs of butter. Sprinkle the potatoes with more chopped walnuts.
Roast the carp in the oven at 200°C for 40-45 minutes. If necessary, add a little water. I did not need, the dish remained juicy.
