Goat cheese and apple chips salad
Inspired by Yoli
Ingredients for 2 people:
Mixture of salad leaves (iceberg, radicchio, curly)
1 apple
½ avocado
50 g hard goat cheese (or blue cheese)
2-3 pitted olives
Fresh dill
50 g walnut
2 tablespoons soy sauce
1 tablespoon fine mustard
1 teaspoon honey
1 tablespoon black sesame seeds
½ teaspoon dried dill and garlic
3 tablespoons olive oil
4-5 tablespoons water
Preparation:
Rinse and halve the apple. Core and seed. Slice into thin half-moons (such as chips). Spread them on a baking dish, brush with a little olive oil and place in a preheated to 160°C oven. Let dry and brown slightly.
Divide the mixed salad in two plates. Sprinkle over olive slices, avocado chunks, walnut quarters and cheese cubes. Also add the dried apples.
For the dressing, combine all sauce ingredients in a bowl and whisk until smooth. Serve the salad immediately with the sauce in a gravy boat.
