Christmas cookies with almond paste
2-2½ cups flour (mixture of rye, spelt and wheat flour)
½ cup brown sugar
100 g honey
100 g butter
½ teaspoon of salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground galangal (or more ginger)
½ teaspoon ground ginger
1 pinch of ground cloves
2 tablespoons whiskey (or rum)
Almond paste in 3 colors and sugar stars for decoration
In a bowl, beat the butter and sugar until smooth. Add the eggs and work again with the hand blender. Then stir in the honey, spices, salt, baking soda and whiskey. Finally, incorporate the flour. Knead until you get a soft dough.
Put a baking paper on the work surface and sprinkle with flour. Roll out the dough to a thickness of 3-4 mm. Cut Christmas cookies with a cookie cutter. Bake at 180°C until golden brown. Cool on a wire rack. Store in a cookie jar until you decide to decorate them, which may be the next day.
Roll out the almond paste into a thin sheet. Cut the same figures as the cookies with Christmas related cutters and fix them on the biscuits. Finish the decoration with sugar stars.
