Spinach salad with black rice and shrimps
Ingredients for 2 people:
2 handfuls of spinach
½ ripe avocado
50 g of cheese
8-10 cooked shrimps
4-5 rosemary sticks
2 tablespoons grated Parmesan cheese
½ cup black rice
1 cup water
Salt and pepper
1 teaspoon vinegar
1 teaspoon brown sugar
Fresh lemon juice and olive oil or favorite vinaigrette (recipe for ours)
Preparation:
Start preparing the rice, which can be done the day before. Rinse it thoroughly in a colander under running water until the water that runs away turns clear. Transfer the rice in a saucepan. Pour in the recommended dose of boiling water and simmer gently for 30 minutes. Remove from heat and season with salt, pepper, sugar and vinegar. Cool completely.
Distribute handfuls of fresh spinach in 2 salad plates. Sprinkle with crumbs of feta cheese, tip here and there a shrimp, some avocado cubes and 2-3 tablespoons black rice. Finish with a rain of parmesan and chopped rosemary.
Serve the salad immediately with a favorite sauce. It is equally delicious with just a little fresh lemon juice and olive oil.
