Leek pizza
Based on my grandmother’s recipe
Ingredients:
250 g of yoghurt
1 teaspoon baking soda
1 egg
1 teaspoon salt
4 tablespoons oil
10 g of butter
Flour (5-6 tablespoons)
2 leeks
2-3 tablespoons oil
Salt and pepper
3 eggs
150 g grated cheese
Preparation:
Cut the leeks in 2 lengthwise, then in half-slices. Sauté until soft in a little oil and water, covered. Season with salt and pepper. When cooked, remove from heat and let cool.
Mix the yogurt with the baking soda, then pour into a deep bowl. Dip in the egg and whisk well. Then, pour in the oil and add the salt. Whisk once again. Finally, add the sifted flour. Put as much as to make a cake dough, about 5-6 tablespoons in my case.
Preheat the oven to 180°C and melt the butter in a large round cooking dish (about 26-28 cm). Pour in the dough and spread it evenly, making it look like a pizza dough. Place over the leeks (without sauce).
Separately, beat the 3 eggs and grated cheese. Spoon the mixture over the leeks. Bake the pizza until golden brown. If necessary, cover with aluminum foil to allow the dough to cook well.
Serve the leek pizza hot, though it is delicious even cooled.
