Grilled cauliflower and marinated tofu salad
Ingredients for 4 salads:
1 cup cauliflower
200 g tofu, plain
½ head Chinese cabbage
1 ripe avocado
20-24 Greek olives
60 ml olive oil
½ teaspoon garlic powder
½ teaspoon cumin
½ teaspoon turmeric
½ teaspoon ground ginger
½ teaspoon ground coriander
½ teaspoon ground qimen (fenugreek)
½ teaspoon ground mustard seeds
Salt and pepper
Preparation:
In a bowl, mix all the dry spices, salt a little and mix well. Cover a large baking dish with parchment paper. Spread over the cauliflower florets. Sprinkle evenly with a teaspoon of the spice mixture. Drizzle with olive oil and bake at 210°C the time to brownit nicely. It is relatively fast, about 15-20 minutes. Cool.
Gradually mix the rest of the spices with 50-60 ml of olive oil. A very fragrant sauce results. Tip in and thoroughly wrap the soy cheese (diced) in the sauce. Marinate in the refrigerator for 1 hour.
To present the salad, put a handful of coarsely chopped Chinese cabbage in 4 serving plates. Distribute over the diced avocado, marinated tofu, olives and grilled cauliflower. Season the salad with a little olive oil with spices (from the marinade) and serve immediately.
