Apple and smoked salmon salad
Ingredients for 2 salads:
1 juicy and sweet apple
½ ripe avocado
½ small fresh zucchini
2-3 tablespoons grated Parmesan
40 g of smoked salmon
Hazelnut or walnut oil
Preparation:
Dip the zucchini and potato for 20 minutes in cold water, if they are not organic or homegrown. As they will not be peeled, it is best to remove all traces of agricultural products. Then rinse.
Cut the apple, avocado and zucchini into cubes. Mix and put in 2 plates. Cut the salmon into chunks and spread on both salads. Finally, sprinkle generously with Parmesan and season with walnut or hazelnut oil.
Serve the apple and smoked salmon salads immediately. Homemade basil pesto (like this one) matches them perfectly.
