Pastry bonbons with cheese and quince

Ingredients:

Filo pastry
Oil and butter

2 egg yolks (or 1 egg)
1 quince, medium sized
½ teaspoon cinnamon
1 teaspoon honey
50 g of cheese, such as Gouda, Leerdamer or Emmental
80 g feta cheese
30 g of freshly roasted and chopped walnuts

Preparation:

Prepare the stuffing in two different bowls. In the first one, stir the egg yolks and feta cheese. In the other, combine the Gouda cheese (diced), grated quince, honey, cinnamon and chopped walnuts. Then mix both preparations in 1 place. Melt the butter (1-2 tablespoons ) and mix it with a little oil.

To make the pastry bonbons, take a sheet of filo. Brush it with oil. Then fold it in half lengthwise. Cut into 3 equal parts. Grease each and put a little stuffing on one end. Then roll each of the three sheets and press them on both sides so as to shape bonbons. Continue that way until you finish all the ingredients.

Place the pastry bonbons on a baking tin lined with parchment paper. Bake at 180°C until golden brown. Serve warm as appetizers at a party.
