Walnuts and candied orange peel salad
Ingredients for 2 people:
Salad leaves
1 small orange
10-12 candied orange peels (recipe for homemade)
40 g of blue cheese
1 handful of walnuts
½ ripe avocado
1 tablespoon fresh dill
1/3 cup orange juice
20 to 30 ml of olive oil
Salt to taste
Preparation:
Rinse the lettuce leaves and tear into large strips. Mix in a bowl. Cut the avocado and cheese into cubes. Remove the skin of the orange with a knife, leaving just the flesh. Cut into half-moons. Scatter the cubes of cheese and avocado on the salad. Distribute over the candied orange peels, orange chunks and walnuts (you can roast the walnuts until they smell nice).
Emulsify the orange juice and olive oil. Salt a bit and pour over the salad. Serve immediately, decorated with some chopped fresh dill.
