Plum clafoutis
Based on an old French recipe
Ingredients:
750 g of ripe plums
4 eggs
120 g sugar
25 g butter
250 ml of milk
1 pinch of salt
1 vanilla
100 g flour
1 teaspoon baking powder
Preparation:
Beat the eggs and sugar until fluffy cream (with a hand mixer for 2-3 minutes), then pour in the milk and melted butter. Add a pinch of salt and a dash of natural vanilla. Finally, thicken the mixture with the flour and baking powder (sifted together).
Wash the plums, cut in half and spread in a baking dish (about 26 cm in diameter for a round-shaped tin or 24 cm per side for a square tin). Pour over the egg mixture.
Bake the plum clafoutis in the oven at 180°C about 40-50 minutes or until golden. Cool completely before cutting and serving.
