Moroccan mint tea
Ingredients:
12 g of green tea
1 bunch of fresh mint
½ cinnamon stick
4 cloves
1 piece of dried galangal root (or ginger)
A few drops of lemon juice
Muscovado or brown sugar to taste
Preparation:
Put green tea in a teapot and pour 100 ml of boiling water in it. Toss lightly, then drain the water.
Having the green tea leaves at the bottom of the teapot, add the cloves, cinnamon stick, galangal and mint. Pour 500 ml of boiling water, sweeten to taste and leave to infuse for 5 minutes.
Pour the infused tea in water glasses. Then, with a gesture going from above downwards, pour the tea back in the teapot. This will aerate it and release all its flavors.
Add a few drops of lemon juice and serve the Moroccan tea immediately.
This sounds like a perfect tea. Though I think I would prefer it without the sugar, usually
