Goat cheese and kiwi salad
Ingredients for 1 serving:
3-4 leaves of tender salad (beet leaves in my case)
1 ripe kiwi
1 handful of seedless grapes
Goat milk camambert or other cheese at your preference
1 teaspoon of Dijon mustard
2 tablespoons olive oil
Rinse and cut the salad into large strips. Peel the kiwi and cut it into half-moons, the avocado into dice and the radishes into wheels. Mix all these ingredients in a bowl and season with a vinaigrette made with lemon juice, mustard and olive oil, whisked into smooth sauce.
Spread slices of goat camambert and a few grapes on the salad. Decorate with walnuts (freshly cooked, if you prefer). Serve the salad immediately.
