Broccoli and salmon soup
1/2 head of broccoli
1 small onion or 2 sprigs of spring onion
100 g smoked salmon
100-120 g fresh salmon fillet
2-3 tablespoons Parmesan
1 teaspoon dried celery, parsley and dill
1 tablespoon fresh dill
1 pinch nutmeg
Salt and pepper to taste
Olive oil and butter
Wash and peel the potatoes, onions and carrots, cut the broccoli into small florets. Chop the vegetables in relatively large chunks. Transfer to a saucepan and cover with boiling water. When boiling resumes, season the soup with salt, pepper and the other spices. Simmer over low heat until the vegetables are tender.
About 15 minutes before the end of cooking, add the fresh salmon fillet, washed and diced. The last 2-3 minutes, put the smoked salmon.
Then remove the saucepan from the heat and pour the olive oil. Also add a knob of butter and a little parmesan. Blitz the soup until smooth consistence.
Serve the broccoli and salmon soup warm, decorated with a few dice of smoked salmon.
