Ingredients for 60-65 biscuits:
1 cup sugar (white or brown)
100 g butter
20 ml of neutral oil
1 tablespoon ginger honey (the recipe) or ½ teaspoon ground ginger
1 teaspoon cinnamon
1 vanilla dose
1 tablespoon cognac
2 cups flour
1 teaspoon baking powder
½ cup ground almonds
In a bowl, whisk the eggs and sugar until smooth and creamy substance. Gradually pour in the butter and oil. Flavor with brandy, vanilla, cinnamon and ginger honey.
Grate the apples. Extract all the juice by squeezing them with your hands. Mix in 40 ml of this juice into the dough. Gradually thicken it with the flour (sifted with the baking powder) and almonds. Finally, add the apples.
Using a spoon (or a pastry bag) shape small rounds of the size of a cherry on a baking sheet, spacing them well. Bake the apple cookies at 175°C until golden brown. Count between 10 and 15 minutes.
Cool completely before serving. Possible to coat the cookies with honey or jam and dip them in chopped nuts.
