Rice flour crackers
Ingredients:
150 g rice flour
50 g blanched peanut powder
¼ teaspoon baking soda
¼ teaspoon salt
1 tablespoon soft butter
1 tablespoon olive oil
1 teaspoon oregano
30 g feta cheese
1 egg yolk
½ cup water
Preparation:
In a bowl, mix all the dry ingredients and stir well. Then add the butter and olive oil. Work with your fingers to get evenly oiled crumbs.
Bind the mixture with the egg yolk. Gradually add water. Adjust the amount of water so as to obtain a soft and smooth pastry. Roll it out into a sheet 3 to 4 mm thick. Cut out crackers of desired shape. Prick each with a fork to allow the dough breathe. Place on a baking tray, covered with parchment paper.
Bake the crackers to 180°C, about 10-15 minutes. Let cool completely on a rack, then store in an airtight box to preserve their flavor and crunchiness.
