Chickpea flour flat breads
Ingredients for 2 flat breads:
1 full cup of chickpea flour
5 to 6 tablespoons of oil
1 to 1 ½ cups of water
Salt and pepper to taste
1 teaspoon of dried mint
40 g of parmesan
Preparation:
First, combine all the dry ingredients (including mint and grated cheese) in a bowl. While stirring, pour in the water and oil. In the end, you should have a rather liquid dough, similar to the pancake one. Adjust the amount of water according to the thickness you had. Let the dough rest for 1 to 2 hours, covered with cling film.
Brush a round non-stick tart pan (about 24-26 cm wide) with oil and spread over half the dough. Smooth the surface. You can sprinkle with grated cheese or crumbled feta.
Bake the flat breads for about 20 minutes at 220°C or until golden brown. Serve hot with marinated feta cheese (just soak it in olive oil and season to taste with paprika and herbs).
