Sweet potatoes stuffed with fresh goat cheese
Ingredients for 2 people:
2 sweet potatoes, medium size and uniform
Salt and pepper to taste
75 g fresh goat
1 egg yolk
Thoroughly wash the potatoes, even go with a brush. Dry and wrap them like candies in aluminum foil (each separately). Cook the sweet potatoes directly on the oven rack until soft. It takes about 30 minutes at 200°C. The time depends on the size of the sweet potatoes. Check with a toothpick whether they are ready.
Rest the “candies” for 10 minutes and remove the foil. Dig each gently with a knife and a spoon to form a tray. Apply butter on all sides, sprinkle with salt and pepper. Stir the fresh goat cheese with the egg yolk and lightly salt and season with oregano. Fill the potatoes with that mixture. Bake for 20 minutes or until the filling is firm and gold.
Allow 10 min of rest outside the oven before serving.
