Salmon with pesto and mozzarella
Ingredients:
2 salmon steaks
4 slices of mozzarella
Salt and pepper to taste
2 tablespoons of pesto with herbs:
• 1 bunch of parsley
• ½ bunch of dill
• ½ bunch of rocket
• ½ bunch of thyme
• 40 g Parmesan
• 50 g of shelled sunflower seeds
• ½ teaspoon of salt
• 2 cloves of garlic
• 200 ml of grapeseed oil
Preparation:
Gather all the ingredients for the pesto in a large jar, having washed the greens before that. Pour the oil, add the other products. Use the mixer to turn all the ingredients into a thick pesto sauce. Refrigerate.
Wash the salmon steaks well. Salt and pepper both sides. Place each on a separate sheet of aluminum foil. Coat the salmon with a thick layer of pesto. Follow by two slices of mozzarella. Close the foil to form packets.
Bake the salmon steaks at 200°C between 20 and 30 minutes. Serve warm with green peas (stewed in butter and chopped dill).
