Salmon with coconut mashed potatoes
Ingredients:
2 salmon steaks
Salt and pepper
1 teaspoon of dried parsley, oregano and dill per steak
Grapeseed oil
½ teaspoon garlic powder per steak
4 or 5 potatoes
Coconut milk (or coconut cream)
2 tablespoons butter
2 tablespoons chopped parsley
2 tablespoons chopped dill
4-5 fresh rosemary needles
Salt and pepper
Preparation:
Wash the steaks in cold water. Place on a large piece of foil or baking paper. Salt and pepper both sides. Sprinkle with garlic powder and all the spices. Drizzle with grapeseed oil. Wrap steaks pretty tight, so as to obtain a “calzone”-like package. Bake at 200°C for 30 minutes.
Boil the potatoes in salted water. Drain and mash. Sprinkle with coconut milk, chopped parsley, dill and rosemary. Give a good grating of pepper.
Serve the salmon steaks after 10 minutes of rest outside the oven with a fair portion of mashed potatoes.
