Fruit cake
Based on my grandmother’s recipe
Ingredients:
125 g butter
1-2 tablespoons neutral oil
1 pinch of salt
2 cups sugar
4 eggs
250 g of natural yoghurt
1 teaspoon baking powder
3 cups flour
1 tablespoon soft butter
A little sugar
A little flour
1 kg of fresh fruit (a mixture of cherries, apricots, plums, prunes, apples, pears)
Preparation:
Beat oil, butter, salt and sugar until smooth. Gradually add the eggs and yogurt. Thicken the mixture with the sifted flour and baking powder. Pour the mixture into a rectangular oven dish, well buttered.
Cover the dough with fresh fruit, washed and dried. Cut the larger ones in cubes. From the butter, a little sugar and a little flour make crumbs and sprinkle over the cake.
Cook the fruit cake in a preheated to 180°C oven about 40-50 minutes. Let cool and cut into pieces. Sprinkle with icing sugar and serve at tea time.
