Based on my grandmother’s recipe
150 g soft butter
180 g sugar
1 teaspoon baking powder
200-250 g flour
3 egg yolks
½ teaspoon ground cinnamon
Beat butter and sugar in a bowl until smooth. Add egg yolks, cinnamon, baking powder and flour. Form a firm dough and roll out to a thickness of 4 mm. Cut biscuits with three cookie cutters with the same shape but different in size (large, medium and small).
Bake the cookies in the oven at 180°C until golden brown. Cool completely.
Coat the largest cookies with jam (blueberry in my case). Place on them medium sized cookies. Coat with jam again. Place the smallest cookies on top.
Serve the ballerina cookies with a cherry (from a cherry jam) or other round-shaped fruit on top.
