Sweet winter soup
Ingredients:
1 sweet potato, medium size
1-2 carrots
3-4 florets of cauliflower
1 leek
300 g sweet pumpkin, peeled
2-3 tablespoons of oat flakes
½ teaspoon of the dried celery
Salt and pepper
Ghee or butter
Preparation:
Put all the vegetables, peeled and cut into chunks in a saucepan. Cover with boiling water and let simmer for about 20-30 minutes, when boiling resumes.
Season with celery, salt and pepper. Add the oat flakes to thicken the soup and make it creamier. Count another 5 minutes of cooking, dipping it with a piece of butter when passing by.
Serve the sweet winter soup hot. It is an ideal accompaniment for a light dinner before the fire, enjoying also some roasted chestnuts and walnuts.
