Spinach salad with grilled zucchini
Fresh spinach and arugula
1 dozen cherry tomatoes
3-4 red radishes
50 g of cheese, such as Camembert, Brie or Goat soft cheese
Olive oil and fresh lemon juice
Black pepper and salt
1 pinch of garlic powder
Wash the zucchini and cut them into slices of 2 mm in the length. Grill them in a nonstick pan, coating each strip with some oil (use a brush). It would take about 5 minutes per batch to grill. Transfer the cooked zucchini slices in a covered pan. Season them wth salt, pepper, dill and dried garlic powder. Cover and let stew.
Rinse the arugula and spinach, remove their stems and place them in a bowl. Season with salt, olive oil and lemon juice. Mix gently. Rinse the cherry tomatoes and spread them over the salad. Do the same with the radishes, cheese and zucchini. The latter, you could cut in half lengthwise and roll into snails.
Rectify the seasoning and serve the spinach salad with grilled zucchini fresh. It goes well with grilled meat and crusty bread.
