Salad Vitaminenergy
Ingredients:
Mix of baby salads
1 small cooked beetroot
½ avocado
5-6 bunches of fresh cauliflower
½ juicy apple
1 handful of nuts
2 tablespoons Goji berries
1 sprig of fresh thyme
1 teaspoon of dried chives (or fresh)
Walnut oil (or other)
Himalayan salt
Preparation:
Rinse fruit and vegetables. Peel the apple and avocado and soak the goji berries in a glass of boiled water.
Coat a plate with salad leaves (cut into wide strips). Spread over cauliflower florets and cubed beets, avocado and apple. Sprinkle with Goji berries and chopped walnuts.
Finish by seasoning the salad Vitaminergy with dried chives, thyme and a drizzle of walnut oil. Serve immediately.
